CBD Infused Shrimp Ceviche

This shrimp ceviche is traditionally an all time favorite for a quick appetizer or light meal. The Mt Joy Naturals kitchen has taken a step further and infused it with the awesome benefits of CBD! We don’t use just any CBD though; we make our own! That’s Right, we use a unique all-natural expeller press process that never introduces any alcohol or chemicals to cook off or degrade or cannabinoids! This recipe is packed full of fresh shrimp marinated with cucumber, red onions, cilantro, avocado, and of course, Mt Joy Naturals infused CBD oil! It’s easy to make and loaded with flavor and cannabinoids.
You can make this recipe with raw or cooked shrimp. The shrimp will “cook” when coated in the lemon and lime juice, turning them pink and firm just as if they were cooked by heat. If you prefer, you can blanche the shrimp in boiling water for 2-3 minutes.
Here are some tips for this CBD infused Shrimp Ceviche recipe:
- We recommend not adding the avocado to the recipe until right before serving to prevent it from becoming mushy or unappealing in color and appearance.
- Traditionally ceviche is served alongside seasoned boiled potatoes as a meal. It also goes great with tortilla chips or a nice crusty bread as an appetizer.
- When dicing the serrano peppers, if you prefer no spice to your ceviche you can remove the ribs and seeds to reduce the heat.
- We recommend eating the CBD infused ceviche within 1-2 days of preparation.
Shrimp Ceviche Recipe
What you will need:
1 Large bowl
1 Small bowl
Knife for chopping
Medium to large pot (if you prefer your shrimp cooked with heat)
1lb fresh shrimp, peeled & deveined
3 cloves garlic, chopped
½ cup cucumber, diced
1/4 cup onion, chopped
1 cup Roma tomato, chopped
1 Serrano pepper, chopped (for more heat keep seeds & ribs, for less intensity discard)
1 bunch cilantro, washed & chopped
1 firm avocado, optional
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
3 ml of 1000mg Mt Joy Naturals CBD infused hemp seed oil
6 cups water
Prepare all of your veggies: in large bowl combine garlic, onion, cucumber, Roma tomatoes, Serrano pepper, and cilantro. Lightly toss and set aside.
In small bowl combine lemon juice, lime juice, and Mt Joy Naturals CBD infused hempseed oil, whisk together until well blended. If you prefer to precook your shrimp, bring water to boil, once it is at a rolling boil, turn water off. Add shrimp. Let poach for 2-3 minutes. Drain into colander and let cool. If not then omit this step and move on to preparing your CBD infused shrimp ceviche.
Once the shrimp are cooled to room temperature, add to veggies and mix well. Pour lemon juice and CBD mixture over shrimp and vegetables, salt to taste. Refrigerate for at least 1 hour or up to 8 hours before serving, don’t forget to add in the avocado right before serving!
